APPETIZERS

Guacamole with Lime and Cilantro Vitality

  • 2 ripe avocados
  • 2 cloves Garlic
  • 1 red onion chopped
  • 1 small roma tomato chopped 
  • 1-2 drops Lime Vitality
  • 1-2 drops Cilantro Vitality - add more as needed
  • Salt + pepper to taste

 

Homemade Salsa

  • 3 C chopped tomatoes
  • 1/2 C chopped green bell pepper
  • 1 C onion, diced
  • 1/4 C minced fresh cilantro
  • 2 TBSP fresh lime juice
  • 1 clove garlic, minced
  • 4 tsp chopped fresh jalapeño pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 4 drops Black Pepper Vitality
  • 2 drops Cumin Vitality 
  • 2 drops Cilantro Vitality

Apple Carrot Bread

Ingredients:

  • 6 eggs
  • 2 oz raw honey
  • 6 TBSP ghee
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1 TBSP organic vanilla extract
  • 1/2 C organic coconut flour
  • 1 grated carrot
  • 1/2 an apple, chopped
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger

Instructions:

Preheat oven to 350 degrees.

Blend all ingredients, except carrots and apples, in a blender until smooth.

Add in the carrots and apples and pulse until desired texture is achieved. You can blend smooth or leave some chunks.

Pour into a stainless-steel loaf pan lined with parchment paper (or make mini muffins using small muffin tin). 

Bake for 45 minutes (~20 minutes for mini muffins) or until inserted toothpick comes out clean. 

Let cool 15 minutes before slicing.

Store in refrigerator.

Modifications:

When subbing rice flour for the coconut flour and coconut oil for the ghee, it results in having a bread that resembles a baked french toast. Try serving with a little maple syrup!

For a sweet alternative at serving, top with cinnamon honey butter: 1 part honey to 2 parts ghee and a sprinkle of cinnamon.

 

Einkorn Bread 

For bread machine.

Ingredients:

  • 3 eggs
  • 1 tablespoon apple cider vinegar
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1 1/2 cups buttermilk (room temperature)
  • 1 teaspoon salt
  • 1 tablespoon xanthan gum
  • 3 cups Einkorn Flour
  • 1 tablespoon active dry yeast
  • 1/2 cup tapioca starch

Instructions:

  1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer.
  2. Select the sweet dough cycle
  3. Five minutes into the cycles, check the consistency of the dough.
  4. Add additional flour or liquid, if necessary.
  5. When bread is finished, let cool for 10 to 15 minutes before removing from pan.

 

BREAKFAST

Chocolate Peanut Butter Protein Shake

Ingredients:

  • 1 cup unsweetened vanilla almond milk
  • 1 cup ice
  • 2 scoops Pure Protein Chocolate Deluxe
  • 1/4 cup natural peanut butter

1 banana

Instructions:

  1. Blend all ingredients until smooth and creamy.
  2. Serve immediately, enjoy cold.

 

Overnight Einkorn Berry Breakfast  

Tastes like a crunchy cinnamon oatmeal!
This is what you need:

  • 1 cup young Living einkorn berries
  • 1.5 cups almond milk
  • 1 drop Cinnamon Bark Vitality
  • 1/2 to a full cup (to taste!) diced apple
  • honey (or your preferred sweetener) to taste

Combine all the ingredients and stir well.

Place in refrigerator overnight (at least 8 hours) and eat in the AM.

 

Tropical Protein Smoothie

Ingredients:

  • 1 scoop Pure Protein Vanilla Spice
  • 1 cup unsweetened vanilla almond milk
  • 2/3 cup frozen mangos 
  • 2/3 cup frozen strawberries
  • 2/3 cup frozen pineapples

Instructions:

  1. Place ingredients in a blender and blend until smooth.
  2. Serve immediately and enjoy cold.

 

CONDIMENTS

Homemade Grapefruit Vinaigrette Dressing

  • 3 tablespoons grapefruit juice from the can, or 3 tablespoons fresh-squeezed
  • grapefruit juice
  • 1/4 cup olive oil
  • 2 teaspoons honey
  • 1 or 2 drops Grapefruit Vitality Essential Oil, to taste
  • Pinch of salt and pepper

 

Honey Lemon Butter

Ingredients:

  • 1 tablespoon honey
  • 1 tablespoon unsalted butter
  • 2 drops Lemon Vitality

Instructions:

  1. Mix the ingredients vigorously by hand until a uniform cream forms. (If using a hand mixer, avoid highest setting.)
  2. Serve with warm Einkorn Bread for a delicious, nutritious snack.

 

Lime Cilantro Dressing

Ingredients:

  • 1 1/3 cups sour cream
  • 3/4 cup Greek yogurt
  • 1 bunch Cilantro (or add Cilantro Vitality - 1 drop at a time to taste)
  • 1 package Ranch dressing mix
  • 4 tablespoons salsa verde
  • 2 cloves Garlic
  • 1/8 teaspoon Tobasco
  • 6 drops Lime Vitality

Instructions:

  1. Blend all ingredients until you reach a creamy, uniform consistency.
  2. Enjoy over veggies, tortilla chips, quesadillas, etc. 


Ningxia Elderberry Syrup

Elderberry has been used historically for health benefits and culinary purposes. These berries contain several antioxidants, vitamins, and minerals that have made the berries an ideal choice for immune support! Several studies have even found that elderberries help reduce cold-like symptoms.

*To enjoy the benefits, make sure to try incorporating elderberry syrup as raw elderberries can cause negative effects including nausea and abdominal cramps.

  • 1 cup dried Young Living Ningxia Wolfberries
  • 1 cup dried Organic Elderberries
  • 4 cups filtered water
  • 1 cup Organic Honey

Young Living's Vitality Oils: (2 drops each) (optional)
Cinnamon Bark, Frankincense, Orange, Thieves, Nutmeg, Ginger, or Clove

Instructions:

Put the first 3 ingredients in an instant pot on manual high pressure for 10 minutes. Vent, strain, and stir in honey and oils.

or

For stove top: Bring first 3 ingredients to a boil, then reduce heat and simmer for 30 minutes. Reduce liquid by 1/3 or more if you want a thicker syrup.

Strain, stir in honey, cool slightly, then add oils.

Cool liquid slightly before adding essential oil.

Pour in mason jars or empty Ningxia Red bottles. 

Store in fridge for up to 3 months.

Serving Size:
1 tsp daily for children
1 tbsp daily for adults

 

Oil-Infused Honey

  • 1/4 Cup honey
  • 5-8 drops Cinnamon Bark Vitality, Lemon Vitality, or Thieves Vitality
  • Place honey into an air-tight 2 oz. glass jar.
  • Add oil of choice and stir well.
  • Enjoy in hot tea, warm water, or by itself.

    

Vegetable Seasoning

Ingredients:

  • 4 tsp celery salt
  • 3 tsp dried parsley flakes
  • 1 1/2 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/4 tsp Turmeric
  • Toothpick-method Parsley or Thyme Vitality
  • 1 drop Sage Vitality

Instructions:

Mix all ingredients together.

Store in an airtight container.

 

HEALTHIER SNACKS

Elderberry & Ningxia Red Gummy Worms

  • 1/2 cup Elderberry Syrup
  • 1 cup Ningxia Red
  • 2 Tablespoons raw honey
  • 4 Tablespoons unflavored Grass Fed gelatin
  • 1-3 drops of any citrus Vitality essential oil (optional)
  • 2 capsules of Life 9 probiotic (optional)
  • silicone molds

Instructions:

Heat 1/2 cup elderberry syrup to just boiling

Remove from heat and add gelatin. Whisk briskly until dissolved

Combine the remaining ingredients and whisk

Pour into molds (a syringe is helpful)

Place molds in the fridge until set

Store in fridge

 

Soup

Butternut Squash Soup

Ingredients

  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 2 cloves garlic, chopped
  • 2 lbs butternut squash, cubed
  • 3 cups vegetable broth
  • 1 cup of heavy whipping cream
  • 1 tablespoon brown sugar
  • 2 drops Clove Vitality
  • 1 drop Cinnamon Bark Vitality
  • Salt & pepper

Directions

In soup pan, sauté onions, garlic, salt, and pepper in olive oil over medium heat until tender. Add cubed squash heat until tender. Add cubed squash and cook for 3-5 minutes. Next, add vegetable broth, whipping cream and brown sugar and bring to a boil. Boil on medium-high heat for 25 minutes or until squash is fork tender. Remove from heat. Using a hand mixer, puree until smooth. Stir in the Vitality oils. Allow oils to infuse into soup for 5-8 minutes and then serve.

 

DESSERT

Cinnamon Rolls

Ingredients

  • 2 cups milk
  • 1/2 cup sugar
  • 3/8 cup shortening
  • 5 cups flour, divided
  • 1/2 tablespoon dry yeast
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt, heaping
  • 1/2 cup sugar
  • 1/2 cup butter, softened
  • 5 drops Cinnamon Bark Vitality
  • 1 cup confectioner's sugar
  • 2 tablespoons milk
  • 2 drops Orange Vitality 

Directions

In a saucepan, combine first 3 ingredients. Heat until shortening melts. Do not boil. Remove from heat and cool to 115 degrees Fahrenheit. In a large bowl, combine the yeast and 3-1/2 cups of flour. Add liquid mixture to dry ingredients and stir until it is a thick cake batter consistency. Let rise in a warm place until double the size.

In a small bowl, combine 1 cup flour, baking soda, baking powder and salt. Add second mixture to the dough after it's risen. Stir well. Turn this dough out onto a well-floured surface and work in extra flour until dough is easy to handle. At this point, dough can be refrigerated up to 5 days.

Roll dough into a rectangular shape. Combine softened butter, 1/2 cup of sugar and Cinnamon Bark Vitality. Spread over dough. 

Roll the dough up starting at one of the long sides, rolling up to the other long side. Use a piece of thread or floss to cut sides of cinnamon rolls by sliding the center of the thread under the roll of dough and bringing the ends up, criss-crossing the thread until it cuts off a uniform piece of the roll. Place rolls toughing one another in large rectangular dish.

Let rolls rise in oven at 110 degrees for 45 minutes until double in size. Bake at 275 degrees F for 20-25 minutes. Remove rolls from oven.

Mix confectioner's sugar, milk and Orange Vitality in small bowl. Drizzle glaze over the rolls while hot and serve warm.

 

Fresh Apple Pie

Makes 1, 9-inch pie

What you will need:

  • 1 quart apples (2 of Granny Smiths and 3 Honeycrisps)
  • 1 Pie Shell + Top Crust, 9 inch unbaked
  • 2 Tablespoons butter
  • 2 Tablespoons Einkorn Flour
  • 3 drops Orange Vitality
  • 3 drops Lemon Vitality
  • 1 Cup Organic Cane Sugar
  • 1-2 drops Nutmeg Vitality
  • 1 drop Cinnamon Bark Vitality

Instructions:

Place apples in large bowl and add all ingredients except butter and crusts.

Stir together to coat the apples.

Pour into unbaked Pie Shell.

Dot with butter.

Cover with top crust and poke a little with with toothpick to vent.

Bake in oven at 400 degrees Fahrenheit for 20 minutes with protective pie shelf or foil covering outer rim of pie to keep from browning too fast.

Reduce heat to 400 degrees and bake for 15 minutes.

Then, lower heat to 350 degrees and bake 10 minutes longer

Brush top crust with mixture of 1 tablespoon sugar and 1/4 cup milk.

 

Ginger Cookies

  • 1.5 cups butter
  • 2 cups sugar
  • 1/2 cup molasses
  • 2 eggs
  • 4 cups flour
  • 4 teaspoons baking soda
  • 1 teaspoon salt
  • 2 drops Cinnamon Vitality
  • 2 drops Clove Vitality
  • 4 drops Ginger Vitality

Chill for 1 hour, then roll cookie balls in sugar.

Bake at 350 degrees for 10-12 minutes.

 

Pumpkin Pie

What you will need:

  • 1, 9-in unbaked pie crust

Filling:

  • 3 organic eggs, beaten
  • 1 can (15-oz) organic pumpkins
  • 3/4 Cup organic, packed light, brown sugar
  • 1 tsp. salt
  • 1 Cup half-and-half
  • 1 drop Cinnamon Bark Vitality
  • 1 drop Ginger Vitality
  • 1 drop Clove Vitality
  • 1 drop Nutmeg Vitality

Instructions:

Heat oven to 400 degrees Fahrenheit

Whisk eggs, pumpkin, brown sugar, and Vitality oils on medium bowl until well blended.

Beat in half-and-half.

Pour mixture into unbaked pie shell.

Carefully place pie on rack in center of 400 degree oven.

Bake 15 minutes.

Reduce oven setting to 350 degrees Fahrenheit.

Continue baking 35-40 minutes longer or until knife inserted midway between center and edge of pie comes out clean.

Cool completely on wire rack.

Refrigerate loosely covered, until firm - several hours or over night.

Garnish with pecans and whipped cream.

Hint: Pumpkin pie should be removed from the oven before the center is completely set. The center will jiggle slightly when dish is gently shaken. Filling will continue to "cook" after it's removed from the oven and center will firm up quickly.

Test for done-ness: with a thin-blade knife, insert and remove. If knife is clean, custard for pumpkin pie is done. If any filling clings to the blade, bake a few minutes longer and test again. Refrigerate any leftover pie promptly.

 

Citrus Coconut Popsicles

Ingredients

  • 1 can of full-fat coconut milk
  • 1 cup of orange juice or orange pineapple juice (Get creative!!!)
  • 1/3 cup (or to taste) agave or sweetener of choice
  • 1-2 drops of Lime Vitality or Citrus Fresh Vitality Essential Oil

Directions

Blend coconut milk, agave, and Lime Vitality Essential Oil.

Pour mixture into popsicle mold, dividing evenly.

Place in freezer for 10 minutes; then top with juice

Freeze again for 30 minutes.

Insert popsicle sticks. Continue freezing until firm.

 

Ningxia Red Ice Pops

Beat the heat with a chilly midday snack, packed with immune support! Your family will love these Ningxia Red Ice pops infused with Orange or Lemon Vitality. Ingredients:

  • 1 cup Ningxia Red
  • ¼ cup distilled water
  • 10 drops Orange Vitality or Lemon essential oil
  • ½ cup sliced fresh fruit such as sliced strawberries, oranges, or raspberries
  • 4 ice pop molds

Directions

Combine Ningxia Red, water, and Orange or Lemon Vitality.

Cut slices of fruit to fit in ice pop molds.

Place fruit slices in molds.

Pour Ningxia Red mixture into molds, covering the slices of fruit.

Place molds in the freezer for 6-8 hours.

Blueberry-Lavender Ice Cream

Ingredients:

  • 2 cups frozen blueberries
  • 1 cup full-fat coconut cream
  • 4 teaspoons blue agave sweetener
  • 4 drops Lavender Vitality essential oil
  • Up to 1⁄3 cup coconut water 

Instructions:

Line a small casserole dish or large container with wax paper or parchment paper.

Add frozen blueberries, coconut cream, Lavender Vitality, and agave to a high-powered blender or food processor.

Pulse ingredients together, adding coconut water 1 tablespoon at a time to help the ingredients blend together smoothly. Be careful not to add too much liquid, or your ice cream will become too soft.

Pour blended ingredients into the prepared dish, cover, and freeze for at least 4 hours.

Scoop into bowls and garnish with any desired toppings.
